Chocolate Covered Cherry Cookies

Cookies:
1 box devil’s food cake mix
1/2 cup of vegetable oil
2 eggs
1/2 cup chocolate chips
1/2 cup chopped maraschino cherries

Ganache:
3/4 cup heavy cream
1 cup chocolate chips
Whole maraschino cherries (patted dry)

Preheat oven to 350′. Mix cake mix, oil, eggs, chopped cherries and chocolate chips in a large bowl. Shape dough into 1 inch balls, smoosh them down a little bit, and place on a cookie sheet 2 inches apart. Top each cookie with a whole cherry. Bake for around 10 minutes. Do not overbake. Pour the heavy cream into a microwave safe bowl and microwave for 1 to 2 minutes until the cream in hot. Add the chocolate chips and whisk until smooth. Place the ganache in the fridge for 10 minutes then spoon the ganache over the cookies and let them sit for a bit (the ganache will thicken). Enjoy!
